Pairing perfectly with Baked Ham, this is a winner every single time it’s served. Even to all the doubting haters!

This is one of those strange recipes that is in every Junior League cookbook across the south.

It’s called Scalloped Pineapple, Baked Pineapple, Pineapple Casserole. Whatever you call it, it’s delicious. And addicting.

When you first hear “pineapple cheese casserole,” you think it sounds so gross. Then, you see how creamy and crunchy it looks, so you take a bite. That bite leads to four more bites, which leads to the whole dang casserole!

Pineapple Cheese Casserole is the perfect side dish for turkey on Thanksgiving, ham on Easter, and everything in between.

It’s a great potluck, church picnic recipe to bring with you.

You can make it ahead of time, and heat up before serving.

And, don’t ask me how I know this, but it makes a MEAN ham sandwich topping.

How to Make Pineapple Cheese Casserole

First, in a large mixing bowl dump your canned crushed pineapple and drained pineapple tidbits.

Next, sprinkle over the sugar and flour, and give it a good mix with a spatula.

Sprinkle in the cheese and mix again until well combined.

Dump into a greased 8×8 casserole dish (I prefer to use a pie dish!).

Top with the buttery cracker mixture.

After the oven has preheated to 350˚, bake the casserole for 20+ minutes.

Watch for the casserole to get all brown and bubbly!

Serve hot, and with plenty of ham or turkey! Yum.

You can even double this and add to the usual 9×13″ casserole dish — bakes just the same, maybe slightly longer in time.

Ingredients

Scale
  • 1 cup sugar
  • 1 cup flour
  • 1 20-ounce can crushed pineapple (with the juice)
  • 1 cup shredded cheddar cheese
  • 1 sleeve Ritz crackers
  • 1 tablespoon butter, melted


Instructions

  1. Preheat oven to 350˚
  2. Combine sugar, flour, pineapple, and cheese in large bowl.
  3. Mix crackers and melted butter together in a separate bowl.
  4. Pour pineapple + cheese mixture into greased 9×9″ casserole dish.
  5. Top with buttery ritz crackers.
  6. Bake at 350˚ until gold and bubbly. {20+ minutes, y’all! Watch the crackers so they don’t burn!}
