Naan Bread.

Oh my… I love naan bread. Let’s be honest, I love food that doesn’t originate in America – and one of my favorites is middle eastern cuisine. Anything curry, tagine, or concerning cous cous has my name written all over it!

Yesterday, I wanted some Naan bread. You know, those soft-pillowy clouds of dough?? It can’t be THAT hard, I thought… And, I was right! For a yeast dough, it is so simple.

Naan Bread

3 cups Bread Flour – I didn’t have bread flour, so I used All-Purpose. Bread Flour has more gluten/protein in it, and I don’t think I would buy a bag just for this…
1 tsp Yeast
1 tsp Salt
4 TBS Greek Yogurt
1 TBS Honey
2 TBS Oil, I used Olive Oil

Combine flour, yeast and salt in bowl and stir with wooden spoon. Add all other ingredients and stir till ball of dough forms. Place in a lightly oiled bowl and cover with plastic wrap. Let sit for 2+ hours (in an oven with the light on and door shut!) or until it doubles in size.

Now, I used our awesome new Big Green Egg, but the same scenario can be created using a grill, or pizza stone in your oven. Make sure it’s hot, hot, hot! At least 475˚.. If not hotter! My BGE was about 700˚ – so you could use your broiler, but I haven’t tried it that way…. So, don’t hold me accountable!

While your cooking vessel comes to temperature, turn your dough out onto a floured surface. Divide into 8 parts, and shape each into a ball. Roll them out till fairly thin – no need to keep in a circle, more oblong shapes are authentic. Once all have been rolled out, take to your grill/oven and plop on. Cook about 3-4 minutes per side. My BGE was hot, so they cooked in about 90 seconds. You will see your dough puff up – that’s a good thing! It’s supposed to do that! – flip over and cook for another 2 minutes or so.

In a sauce pan, melt a couple tablespoons of butter. Once it’s melted, turn off your heat. Using a microplane, grate a clove of garlic into the butter. Followed by any other herbs you may have on hand – I used fresh thyme leaves on mine! Brush this combination onto your warm bread.

Try not to eat all of them while standing at your counter….
