There are infinite possibilities to cobb salad ideas – and, using leftover grilled chicken is not a genius hack. It’s been done over and over and over. But! It’s a tried and true recipe that always delivers on appearance and taste! 

In the movie Julie and Julia there’s the scene where Julie goes to lunch with her friends — and they all order the cobb salad, each with a different topping removed. Julie doesn’t like eggs, so she orders her cobb salad sans eggs. 

That’s how I feel about cobb salads, too! I don’t like eggs, but I like other things.

This is a salad recipe you can mix and match ingredients until you find the combinations you love the best.

You may even find you have several combos, which makes eating this salad often not so bad!

  • butter lettuce
  • hard-boiled eggs
  • shredded carrots
  • diced cucumbers
  • goat cheese
  • french onion strings
  • greek yogurt ranch dressing

What Kitchen Items Do I Need?

  • Pasta Bowls work so well for cobb salads. They’re shallow, so there’s more room to line everything up.
  • If you’re serving this “DIY” style as a salad bar, you might want some small bowls for all the toppings.
  • This wooden tray would be nice for serving a large cobb salad.

Description

Low Carb Cobb Chicken Salad is a great way to use up leftovers for a low carb/keto recipe idea anytime!


Ingredients

Scale
  • 2 cups chopped butter lettuce
  • 2 chopped hard-boiled eggs
  • 1/2 cup shredded carrots
  • 1/2 cup diced cucumbers
  • 3/4 cup sliced grilled chicken
  • 1/4 cup french onion strings
  • 1/8 cup prepared greek yogurt ranch dressing


Instructions

  1. Chop all ingredients, and place aside.
  2. Assemble salad in a bowl, and “line up” prepped items however you please.
  3. Pour dressing over top and serve!
