Low Carb Chicken Bistro

An easy low carb recipe sure to please you and your family. 

Here in Asheville, if you haven’t had Chicken Bistro, then you must not be in our crowd. I think everyone I know makes this dish. It is super easy and simple, but comes loaded with noodles. Which are super yummy! Just not when you are wanting to eat Low Carb….

Here’s my take on Chicken Bistro without the noodles!



Low Carb Chicken Bistro
(the great thing about this recipe is you can double, triple, etc. This was for three people.)

Chicken Breasts (I did 3)
Ken’s Lite Caesar Dressing, about 1/2 a cup

*marinate these two items together for at least an hour, if not several.*

In a bowl combine 2 tablespoons each of the following:

Pepperoni, chopped
Sun dried Tomatoes (in oil), chopped
Capers, the small berries left whole
Feta Cheese
Parmesan Cheese

Cook your chicken breast over medium high heat in an oven proof skillet. Once chicken is almost cooked through (most chicken breasts should take 6-8 minutes?), top with chopped pepperoni and cheese mixture and a final sprinkle of mozzarella cheese. Just a small pinch per piece of chicken!

Bake at 350˚ in oven until cheese is melted, about 5 minutes.

Serve with vegetables or a light salad.

My family really enjoyed this recipe. It is great leftover, chopped into a bed of romaine!

Is one of your New Year’s resolution to lose weight, eat healthy, and become the best you?! Mine isn’t exactly that… but, I am wanting to live a Low Carb Lifestyle. I have PCOS, and eating less carbs will significantly help the way I feel on a daily basis. Who wants to join in?!
