Lasagna Chicken Recipe

It’s back-to-school season, and you might need some easy recipes that are simple to prep in the morning.

We all need a great recipe that comes together quickly. Whether it’s because the kids are headed back to school, you’re starting a new job, or life is just really busy.

When you have a “toolkit” filled with delicious recipes the whole family loves, that’s a win-win!

Lasagna Chicken is exactly that recipe! It’s easy to make ahead of time, you put it in the oven and have time to get a few things done. And serve it with your favorite side dish recipe!

How to Make Lasagna Chicken

Ingredients You’ll Need:

Chicken Breast – I prefer chicken cutlets, but whatever you have is fine, You’ll just want to make sure you cook the chicken to 165 degrees f internally.

Italian Dressing Mix – that little packet used to make Balsamic Vinaigrette! It’s so flavorful!

Ricotta Cheese – you can use either full fat or part skim, doesn’t matter! If you’re not a fan of ricotta cheese, you’ll find some substitutes below.

Italian Seasoning – filled with parsley, oregano, basil, thyme, and rosemary it adds a delicious flavor to this recipe!

House Seasoning – this is a blend I make for my kitchen. The recipe is in the recipe card notes below!

Marinara Sauce – this recipe calls for 13 ounces, which is much less than a full jar. So, it’s either a great way to use up the leftover marinara sauce. Or, you can use a pizza sauce-sized jar. Rao’s makes pizza sauce that I buy and use as a marinara sauce all the time! It’s delicious.

Smoked Mozzarella – you’ll find this in your deli section’s cheese area. What I like to call the “nice” cheese section! If your store doesn’t have any, you can substitute smoked provolone or regular mozzarella.

Kitchen Equipment You’ll Need:

  • Baking Dish
  • Mixing Bowl
  • Box Grater
  • Aluminum Foil

Ricotta Substitutes:

Cottage Cheese – cottage cheese has way more moisture than ricotta cheese. Just be aware your dish might be a bit soupier than you expect. Nothing some pasta and garlic bread can’t soak up!

Cream Cheese – either allow it to come to room temperature or use whipped cream cheese for a lighter texture.

Boursin Cheese – this creamy, garlic and herb cheese is a wonderful substitute. Adds a whole new dimension of flavor to the dish!

Sour Cream – this will definitely add a tangy flavor to your chicken lasagna!

First, Season Your Chicken

Plop your chicken into a baking dish. If you’re worried about anything sticking, go ahead and spray your dish with non-stick spray.

Using the Italian Dressing packet, you’ll sprinkle it over each side of the chicken. Just evenly sprinkle it over one side, flip the chicken using tongs, and sprinkle the rest overtop.

There is no need to marinate the chicken ahead of time. Since it’s being covered with ricotta and marinara, you don’t need to much else.

Second, Mix Up the Ricotta

To a medium-sized bowl, dump your ricotta in.

Add in your Italian seasoning and House seasoning.

Use a spoon and mix everything together really, really well. You want each seasoning to be evenly distributed throughout the cheese.

Now, you’ll smear this over the chicken breast in your baking dish. Just plop some on each one, and smear all together.

Third, Add the Marinara

Add in your 13 ounces of marinara. Just pour it over the ricotta, and spread out over top. No need to be super fancy here! Just spread it around and call it a day!

Now, the CHEESE!

Using a Box Grater, hand grate your smoked mozzarella (or whatever cheese you choose!).

For the best results, you should hand grate your cheese. Of course, feel free to use pre-shredded cheese!

Finally, Bake the Lasagna Chicken

Cover your baking dish with aluminum foil and bake for 30 minutes at 400˚.

After 30 minutes, uncover, and bake until golden brown on top. If you need to use the broiler, go for it! Just watch it closely!

One thing to note: if you are using thin chicken breast, you can reduce your cooking time to 20 minutes, before uncovering. Just use an instant-read thermometer and make sure the chicken is getting close to 165˚ before you remove the foil to brown the cheese.

Recipe Tips

Like any baked dish, you should allow it to sit for 15 minutes before digging in. This will help the sauce to firm up, and the chicken reabsorbs any flavors while it rests.

You can make this ahead of time, keep it in your fridge, then bake it when you’re ready. If you do this, I like to either allow the baking dish to sit out for at least an hour before adding it to the oven or, you can use the COLD oven bake method, Just add the baking dish directly from the fridge to a cold OVEN. Turn the oven to 400˚, and cook for 40 minutes, as per the instructions.

Ingredients

Scale
  • 4 Chicken Breasts (1″ thick or less)
  • 1 pkg Italian Dressing Mix
  • 8 ounces of Ricotta Cheese
  • 2 tsp Italian Seasoning
  • 2 tsp House Seasoning
  • 13 ounces Marinara
  • 8 ounces Shredded Smoked Mozzarella


Instructions

  1. Preheat your oven to 400˚.
  2. In a baking dish add your chicken, and sprinkle the Italian dressing mix over top, on both sides.
  3. In a separate bowl, mix the 8 ounces of ricotta cheese with 2 tsp Italian seasonings and 2 tsp House Seasoning, blend together until the seasoning is evenly distributed.
  4. Smear the ricotta mixture overtop the chicken.
  5. Pour the 13 ounces of Marinara over the ricotta, spread out evenly.
  6. Sprinkle the 8 ounces of smoked mozzarella, and cover the baking dish with aluminum foil.
  7. Bake at 400˚ for about 40 minutes, removing the foil for the last 10 minutes.
  8. Allow the casserole to rest 15 minutes before serving.

Notes

HOUSE SEASONING:

  • 1/4 cup garlic powder
  • 1/4 onion powder
  • 1/4 kosher salt
  • 1/8 cup black pepper

Mix all of these ingredients together in a jar, and use as often as you can!
