It’s the warm and cheesy, slightly spicy pizza dip topped spaghetti squash low carb meal you need this winter.

Easy Cheesy Pizza Dip easily changes into a low carb and keto-friendly dinner idea when you top roasted spaghetti squash.

Chili Onion Crunch and cream cheese are layered with marinara sauce, mozzarella, and pepperonis to create an unbelievably addictive recipe. All this is scooped onto a great keto pasta substitute, the roasted spaghetti squash.

What’s in Pizza Dip?

  • Cream cheese
  • Mozzarella Cheese
  • Parmesan
  • Marinara Sauce
  • Pepperoni

How Do You Make Pizza Dip?

First, in a bowl, plop a brick of softened cream cheese.

Spread it around to get it all “out there.”

Second, take a spoonful of  Trader Joe’s Chili Onions Crunch, like what we used in this roasted cauliflower recipe and plop it into the cream cheese

Mix it around. This picture looks so so gross, and terrible lighting.

Now that it’s winter, I have a two-hour window to get recipes photographed, and these process shots are using my phone! Real-life, y’all! Real-life!

Third, mix it 1/3 of the grated mozzarella cheese and parmesan cheese.

I like to use a Microplane and make an absolute mountain of parmesan cheese!

Fourth, mix all this together, and spread out into a baking dish

Fifth, get out your favorite marinara sauce – I had this one on hand from Trader Joe’s but, I actually prefer Rao’s Homemade.

And if you wanted this easy cheesy pizza dip to be low carb, use Raos!

Sixth, cover all your cream cheese mixture with marinara sauce.

I did run my spoon around it so the sauce went to the edges. If you like the marinara sauce a lot, use a little more!

Now we’ll cover the top in cheese and pepperonis.

These are the pepperonis I buy, and they’re from Trader Joes – super great to keep in the fridge for a low carb snack. Pair with cheese and veggies, and you have an adult Lunchable that’s perfect for eating at your desk while you work. 

As you can see from the picture above, I cut the pepperoni into quarters. I wanted to pepperoni to cover the top, but every bite has some in it.

Finally, you’ll bake the whole thing!

You can add anything you want to your pizza dip.

  • Peppers

Now, we need to roast the spaghetti squash…

Here’s how to roast a spaghetti squash:

First, on a sheet pan add the halved de-seeded spaghetti squash.

You’ll then prick holes on the outside of the squash. I prefer using a fork – it makes it so easy!

If you have some ‘festive’ olive oil, drizzle it inside the spaghetti squash and sprinkle with salt and pepper.

Trader Joe’s has an olive oil that is infused with herbs de Provence and a bay leaf. It is so full of flavor!! If you can’t find this, you could make your own by adding herbs de Provence to olive oil + one bay leaf. Let it hang out for a few days, then drizzle on anything. 

Add a nice sprinkle of salt and pepper before you put this in the oven.

Flip them back over, so the skin is up. 

If you need some tips on roasting vegetables, follow the Roasting Rules.

After about 20 minutes, take them out of the oven and flip over to see how the squash is doing. If you can take a fork and scrape the strands, then it’s ready! If it doesn’t scrape into strands easily, flip it back over for another 10 minutes.

Scoop the pizza dip over the spaghetti squash strands, and enjoy! It’s such a fantastic meal any night of the week. Best of all, you can make all these items ahead of time, then portion out into containers for lunch or dinner during a busy week.

Keto Pizza Dip Spaghetti Squash

Ingredients

  • Pizza Dip – see recipe
  • 1 cup spaghetti squash noodles


Instructions

  1. Preheat oven to 425 degrees.
  2. Split spaghetti squash in half and scoop out seeds.
  3. Drizzle of flavoried olive oil and a sprinkle of salt and pepper.
  4. Flip over so the flat side is face down, and prick holes on the skin side for steam to escape. 
  5. Roast at 425 degrees for 20 minutes, or until a fork inserts easily.
  6. Allow the squash to cool slightly, then scrape the ‘noodles’ out into a container.
  7. Either top with Pizza Dip right away, or save for later.
