Here are a few other seasoning ideas:

Fresh Herbs – fresh thyme, fresh rosemary, etc are wonderful on oven-roasted vegetables!

Lemons – using lemon juice and lemon zest on your vegetables adds a bright acidic flavor.

Garlic – whether you toss a bunch of cloves on the sheet pan, or grate the garlic into the drizzle of olive oil, it’s always a good idea for garlic!

Italian Seasoning – use this when you’re roasting your vegetables and you want an Italian theme night!

Smokehouse Maple Seasoning – this one is best on sweet potatoes or with red onion! The hint of sweetness from the maple, and the smokey flavors really enhance any vegetable you’re roasting.

It’s also a great way to use up the different kinds of vegetables you have at the bottom of your crisper drawers!

Now, you can either toss the cut veggies onto a sheet pan or into a large bowl.

Using the large bowl is helpful for making sure every veggie is coated with oil and seasoning.

The sheet pan is totally fine, and uses one less dish! So, if you’re in a mood, just mix everything right up on the sheet pan.

Once your vegetables are oiled and seasoned, you’ll lay them out in a single layer on your baking pan.

Make sure every flat surface of the vegetables is FACE DOWN. This is the best way to ensure you get a roasted golden brown texture every time!

Your oven needs to be on a high temperature like 425 degrees f. Especially for root vegetables! If you are roasting something more delicate like roasted asparagus, you can go with 400˚.

But, usually, the higher temperature does a better job of roasting.

Allow your vegetables to roast, uninterrupted for 20 minutes. Then, open the oven (watch out for the steam!), and see if they’re ready to be flipped.

How do you know if the tender vegetables are ready to be flipped?? They’ll easily release from the baking dish. If they don’t pull up easily, let them cook a little longer, and eventually, they’ll release!

  4. 425˚. This temperature is a go-to for roasting almost anything.
  5. Cooking time is usually 20-60 minutes, depending on your vegetables.

  • 1 cup quartered Potatoes
