Grilling chicken wings is just like grilling regular chicken, there really isn’t anything exciting or extra to do.

However, in this post, you’ll learn how to season your chicken wings so they’re filled with flavor.

You’ll learn how to grill the wings so they’re perfectly crispy and tossed in a delicious maple buffalo sauce. Of course, with your crispy chicken wings, you can use your favorite sauce!

You’ll love this post because you’re not stinking up the house with the smell of hot oil, or worrying about frying chicken with little kids running through the kitchen.

Grilled Chicken Wing Recipes

Alison Roman opened my eyes to grilling chicken wings on a gas grill! She hosted a buffalo wing + wedge salad party, and after watching her youtube episode, it had to happen!

First, let’s gather the ingredients you’ll need:

  • Raw Chicken Wings – whether you like whole wings, where the flat and drumette are attached, or you like them separated, you’ll need thawed, fresh chicken wings.
  • Chicken Wing Brine – I brined my wings overnight. Do you have to do this, no! Not at all. Did I think it added more flavor? Not really.
  • Seasoning – You’ll need kosher salt and black pepper, but also garlic powder, onion powder, and some ranch seasoning powder.
  • Wing Sauce – in this post, you’ll make your own Maple Buffalo Sauce, but feel free to use whatever sauce you love most!

Next, let’s gather the kitchen equipment you’ll need:

  • Large Bowl – this is to brine the chicken wings if you’re brining them. But, also toss the wings in the dry rub + sauce later. Make sure it’s deep enough to hold all the wings so you can toss them about without struggling. If you don’t have a bowl big enough, use two bowls!
  • Stainless Steel Tongs – you’ll use tongs a lot in this recipe! If you can, buy a pair that are long, like these, so when you’re grilling you’re not burning your arm!
  • Instant-Read Thermometer – a meat thermometer is a must-have when cooking chicken! Especially if you’re not too sure about it!
  • Paper Towel
  • Plastic Wrap
  • Sauce Pot – for the Wing Sauce we’ll be making.

Now, you’ll need a grill for this recipe.

I used a friend’s gas grill (I live where you can’t have a grill!) and used medium-high heat.

I have not tried this recipe on a charcoal grill, but it works the same!

You need even medium heat, with indirect heat somewhere on your grill grates.

Seasoning Chicken Wings

The thing with chicken wings is once you sauce your wing, you really can’t taste any extra flavors. Or, not that I’ve experienced.

So, while I did make a chicken wing brine, I wouldn’t do it again.

All you really need is some House seasoning + Ranch powder. Those two make everything yummy!

Here’s a quick overview of the chicken wing brine:

  • 4 cups Warm Water
  • 3 TBS Kosher Salt
  • 3 TBS Brown Sugar
  • 2 TBS House Seasoning

Mix all of these together until the salt and sugar have dissolved. All the brine to cool, then add your chicken wings to it. Cover with either plastic wrap, or an air-tight fitting lid, then store in your fridge overnight.

Another reason why I won’t be brining the wings again? That bowl takes up so much room!! And not worth it, IMHO.

To your fresh, raw chicken wings, sprinkle a tablespoon of House Seasoning per 2 pounds of chicken wings. You can use a little olive oil to help the seasoning stick to the wings.

Using your tongs, or your hands, make sure each chicken wing is evenly coated with seasoning.

Let your wings hang out in the bowl, covered on the counter while you preheat the grill.

Best Grilled Chicken Wings

Grilled wings start with a clean grill, that is hot and ready!

You’ll place the chicken skin side down on the first side, and you want medium to medium-high heat.

Grill the wings for 8-10 minutes on the first side, flip over, and grill for another 8-10 minutes. You want a good char but not too much!

The skin will produce the most perfect crispy wings with a hint of grilled flavor, something you cannot get in the oven.

If you find some of the wings are getting a little too charred, move them to a side of the grill that isn’t as hot. If your grill has an upper rack, move the tasty wings up there. The cooler part of the grill will allow the chicken wings to cook to an internal temperature of 165 degrees f, and not get burned.

Maple Buffalo Hot Sauce is the same, simple wings sauce you know and love. Butter + Hot Sauce, with the addition of maple syrup. The full recipe is in the recipe card below!

If you like bbq chicken wings, use your favorite barbecue sauce on your wings.

Serve your buffalo wings with homemade ranch dressing or blue cheese dressing! You can also add any extra wing sauce to a separate bowl in case someone wants super saucy wings!

CHICKEN WINGS

  • 2 lbs. Fresh Chicken Wings
  • 1 TBS House Seasoning (recipe in notes)
  • 1 TBS Ranch Seasoning
  • 2 TBS Olive Oil

MAPLE BUFFALO SAUCE

  • 1/2 cup Butter
  • 1/2 cup Frank’s Red Hot Sauce
  • 1/4 cup Maple Syrup

 


Instructions

GRILLING CHICKEN WINGS

  1. Preheat your grill to medium-high heat, while you prepare your chicken wings.
  2. In a large bowl, add the fresh chicken wings. Drizzle 2 tablespoons of olive oil over top, tossing to coat each wing.
  3. Sprinkle in 1 tablespoon of House Seasoning and 1 tablespoon of Ranch seasoning powder. Using your hands, toss to evenly coat each chicken wing.
  4. When the grill is ready, place the chicken wings skin side down first. Grill for 8-10 minutes, then flip, and grill for another 8-10 minutes. Depending on your grill your chicken wings may take a few minutes longer or faster. If you notice some wings getting too charred, move to a cool place on the grill. The wings need to be cooked to 165˚ internally.

MAKING THE MAPLE BUFFALO SAUCE

  1. In a small saucepan, add 1/2 cup of butter, 1/2 cup of Frank’s Red Hot Sauce, and 1/4 cup of Maple Syrup. Whisk together until melted, and allow to boil for 5 minutes, stirring frequently.
  2. When the wings are cooked through, drizzle the sauce over the grilled chicken wings in a big bowl. Use tongs to toss around in the bowl and evenly coat.
  3. Serve with ranch or blue cheese dressing, and extra maple buffalo sauce on the side!

Notes

House Seasoning:

  • 1/4 cup garlic powder
  • 1/4 cup onion powder
  • 1/4 cup kosher salt
  • 1/8 cup black pepper
  • Mix all of these ingredients together
