- 2, 11-ounce cans of Mexicorn from Green Giant, drained
- 8-ounces shredded Cheddar Cheese
- 5 Green Onions, sliced (green and white parts!)
- 1, 14.5-ounce can Fire-Roasted Tomatoes, drained
- 1/2 cup Mayonnaise
- 1/2 cup Sour Cream
- 1, 1-ounce packet Taco Seasoning
- 1, 9.25-ounce bag Honey Barbecue Fritos Twists
Instructions
- In a large bowl, add the 2 cans of drained corn, 8 ounces of shredded cheddar cheese, 5 sliced green onions, and 1 can of drained fire-roasted tomatoes.
- Add in half a cup of mayonnaise and half a cup of sour cream with the packet of taco seasoning to the large bowl with the corn and veggies.
- Mix everything together really well. You can do these steps up to 24 hours ahead of when you want to serve your Fritos Corn Salad.
- Just before serving, smash up the bag of fritos slightly and pour into your large bowl of corn.
- Mix around to distribute the Fritos into the salad.
- Serve immediately!
Notes
If you want to use fresh veggies, use these measurements in replacement of the canned goods:
- 2.5 cups Fresh Corn
- 1 cup diced Fresh Bell Pepper
- 1 cup diced Fresh Tomatoes
