My friend Jane makes the best food.

Years ago, she had us over around Christmas and served an outstanding meal…. Not only was the meal noteworthy, but the entire night is still talked about years later. When Jane greeted us at the door we were welcome with Christmas lights and hugs — all surrounded by the aromas of the meal to come.

Lights were dimmed, Candles were lit, music was playing softly, and the table was set. {Insert mental pictures of Hallmark Movies!} Beside her stove top was all the components for our appetizer, that Jane would then make with us chatting with her in her kitchen.

I absolutely LOVED this! While everything was wonderfully over the top, there was no fuss to it. Simple ingredients combined to create a memorable dinner experience!

Let me tell you about this menu, it was quite impressive: 

  • Tarragon Shrimp {served in ADORABLE seashell baking shells.}
  • Lamb Chops with Mint Jelly
  • Potatoes
  • Simple Salad
  • Garlic Bread
  • Amaretto Spiked Ice Cream with Fresh Whipped Cream

Everything at Jane’s dinner was well-thought, making me feel incredibly welcomed and celebrated. It’s exactly how I want each of my people to feel when they sit around the table! No, you do not have to serve appetizers out of seashells…. But, it was so thoughtful and made for quite the experience!

I’m sharing this Tarragon Shrimp recipe with you as a reminder to elevate the ordinary while keeping it simple. Tarragon shrimp is a cream sauce with butter, sherry, garlic and a hint of tarragon. It is absolutely sinful!

Eliminating one ingredient made this a low carb/keto diet recipe that could be on the table in under 20 minutes! Heavy cream combines with butter and garlic to create a sauce that is rather indulgent. Add the fresh tarragon and it’s a meal you won’t forget! If you aren’t a low carb/keto lifestyler, you could serve this with the sherry I left out, and put it over pasta.

With the garlic bread, oh my! 

If you are hosting a crowd it’s best not to make things that require a lot of work when people are arriving. But, if you choose something like this easy keto shrimp recipe, you can have your people help you make it, just like Jane did!

You can make the cream sauce ahead of time, and have the shrimp off to the side ready to be cooked when you and your peeps are milling about with a cocktail in hand. {May I suggest a Festive Moscow Mule??} I

haven’t tried it, but you could roast your shrimp on a half sheet pan, and add to the cream sauce. That way, you don’t mess up your stovetop with splattering butter and shrimp juice. 😉 <—– I’m always trying to figure out ways to make my kitchen less messy at serving time…. That is SUCH a conundrum!

So, this easy low carb/keto shrimp recipe would pair well with Parmesan Zucchini if you wanted to keep the whole meal low carb. 

Or! If you’re feeling REALLY naughty, serve over Goat Cheese Grits for the most decadent Shrimp and Grits recipe you’ve ever tasted! The subtle anise flavor from the tarragon complements the goat cheese.

I might add a spritz of lemon juice over the whole thing to really bring out all the flavors.

  • Butter
  • Fresh Garlic

  • Black Pepper
  • Shrimp

What You May Not Have:

  • Fresh Tarragon
  • Sherry (if no go on the low carb!)
  • Pinot Grigio (if you’re living that Low Carb Lifestyle!)

Description

Tarragon Shrimp is a creamy, dreamy, deliciously easy appetizer or main dish. Shrimp is bathed in a buttery cream sauce filled with sherry or pinot grigio, depending on your carby preference—then laced with bright tarragon for an unforgettable recipe.


Ingredients

Scale
  • 1 pound peeled and deveined shrimp
  • 8 tablespoons salted butter, separate into 4 and 4.
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • Optional: 1/2 cup Sherry or Pinot Grigio
  • 2 teaspoons minced fresh tarragon
  • salt and pepper to taste


Instructions

  1. Pat shrimp dry with paper towel and set aside.
  2. In a skillet, melt 4 tablespoons of butter and saute shrimp until just pink on either side. Remove and set aside.
  3. Add 4 tablespoons of butter to skillet and saute garlic for 30 seconds.
  4. If you are adding sherry or wine, add now to butter and garlic and reduce by half.
  5. Pour in heavy cream and stir to combine.
  6. Bring to a boil and let the sauce thicken.
  7. Once sauce is thick, add salt, pepper, and tarragon. Swirl around.
  8. Add shrimp back into the skillet and toss until well coated.
  9. Serve immediately.

Notes

If you’re serving this as a main dish, double the recipe and serve over pasta!
