Copycat Mexican Pizzas

Copycat Mexican Pizzas are the homemade version of Taco Belle’s, it’s super easy to make at home! Tortillas are layered with taco meat and cheese, then slathered in guacamole.

Copycat Mexican Pizzas are a super fast and easy weeknight meal for you! 

Did you grow up eating these from Taco Bell?! I can’t remember the last time I went to Taco Bell, and I don’t even know if they still have them on their menu… But! I used to LOVE them as a kid!

How to make Copycat Taco Bell Mexican Pizzas

Ingredients:

  • Taco Meat
  • Black Beans, drained and rinsed
  • Refried Beans (I didn’t have any on hand, thanks to COVID)
  • Soft Tortillas
  • Cheese
  • Taco-Toppings

How do you make taco meat from scratch?

Over medium-high heat, brown your ground beef until cooked all the way through, and broken apart. I LOVE this kitchen tool and use it every time I cook ground beef. 

Sprinkle in the seasoning, and stir really well.

You’ll want to add some water to make this a loose mixture — if you’re feeling extra fancy, you could add a can of Rotel tomatoes!

Let this simmer for about 8 minutes or so. 

Ground Beef Taco Mexican Pizza

On a sheet pan, place four tortillas, and top with a mixture of ground beef taco meat, black beans, and some cheese. I threw on a few green onions, just because I wanted the flavor inside.

For a true copycat version, you would smear refried beans on the tortilla, which does give the taco meat something to stick to… However, my grocery was out of refried beans, so I skipped them!

Top each meat-filled tortilla with another tortilla.

Sprinkle cheese on top, and make it a *good* sprinkle of cheese! ?

Place the sheet pan in a 350˚ oven for about 10 minutes.

Keep in the oven until the cheese has melted, and the copycat Mexican pizzas are heated through.

You may want to turn on your broiler for the last minute to get the cheese really brown and bubbly! 

Quick and Easy Mexican Pizza Recipe

Take them out and serve right from the sheet pan!

Top each one with taco-toppings.

Yep! You sure can! Just layer them between parchment paper, then pop into a 350˚ oven when you’re ready to eat one!

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 can refried beans
  • 1 1/2 cups shredded cheddar cheese
  • 8 tortillas
  • taco-toppings


Instructions

  1. In a large skillet over medium-high heat, brown ground beef until cooked through.
  2. Sprinkle in taco seasoning, and stir really well.
  3. Pour in water, and stir to loosen the mixture up.
  4. Let simmer for 8-10 minutes.
  5. You can add in 1/2 cup of black beans if you’d like.
  6. In a bowl, mix the ground beef taco meat with 1/2 cup of cheese and some green onions.
  7. On a sheet pan, place four tortillas.
  8. Spread refried beans on each one.
  9. Top the refried beans with the taco meat mixture.
  10. Place a tortilla on top of each pizza, and sprinkle cheese on top.
  11. Bake in a 350˚ oven for 10+ minutes, until the cheese, is melted and browned on top.
  12. Serve from the sheet pan with taco-toppings.

Notes

Freeze baked mexican pizzas in between parchment paper — and heat in a 350˚ oven for 10 minutes.
