When it comes to a good dinner idea, Chipotle Patty Melts are the way to go! Smokey seasoned ground beef is grilled in a skillet over browned onions, then the perfect melting cheese is added on top. Broiled then toasted on Hawaiian bread for a delicious sandwich combo.

This isn’t the typical patty melt that you find on a diner menu. The classic patty melt is made up of ground beef, swiss cheese, and rye bread. It’s cross between a burger and grilled cheese. And, the classic is just delicious!

Chipotle Patty Melts use chipotle hot sauce seasoned ground beef, griddled onions, Monterrey jack cheese, and a super yummy but not spicy chipotle mayo. All of this is on a subtle, but sweet Hawaiian bread slice.

Chipotle Patty Melts Cast of Characters:

  • Ground Beef
  •  Chipotle Hot Sauce
  • A1 Sauce
  • Vidalia Onions
  • Monterrey Jack Cheese
  • Butter
  • Hawaiian Bread Loaf

In a large bowl, dump the ground beef in along with the chipotle hot sauce, A1 sauce, Worcestershire sauce and a little sprinky-dink of salt. Mix all this together and make into rectangle-shaped patties. You can do this the day before if you’re wanting to work ahead for a dinner party.

Thinly slice the onion and turn on the skillet to medium-high heat. 

I had made some bacon earlier in the morning, and there was still bacon drippings on the skillet – just use this to cook your onions if you have it! Or, spread a tablespoon of butter until it gets all foamy – then add your onions in a single layer.

Let the onions sit, and don’t move them around until they start turning brown. Now, if you’ve sliced your onions super thin, they’ll start turning brown in about 60 seconds.

Flip-flop these onions around back into a single layer.

Since I only had six patties, I could fit them all in one skillet. If you need to batch grill, take some of the onions off and set aside. Arrange the onions where you’ll grill each patty. We’re grilling the onions into each patty. YUM!

Add the patties on top of the browned onions and let them sit there without moving. Just let them get all happy with the onions!

When you can see that there is browning on the sides, and some of the meat juices are coming up from the center, it’s time to flip. I did flip these a tinge too early, but it’s a tricky balance with the onions and not letting them burn!

Now, we’ll add some cheese while they cook on the flip side…

After you’ve added the cheese, place them on a foil-lined baking sheet and broil until brown and melty. This is where the classic patty melt gets the volume turned up. Usually, the cheese is added to either side and melted while being toasted. Like, a grilled cheese. However, I love the slight crust that browned cheese gives in a sandwich. One more depth of flavor, friends!

While the patties are melting with the cheese in the broiler, add some butter to a CLEAN skillet and let it get foamy.

Add some Chipotle Mayo to a slice of Hawaiian bread, and place in the skillet to start browning.

Take your patty melts out of the oven, and place one piece on the toasting bread.

Top with another slice of chipotle mayo’d bread, and flip, to toast the other side. 

Press down gently… then remove from the pan to serve!

Chipotle Patty Melts

Ingredients

Scale
  • 1 pound ground beef
  • 1 tablespoon A1 Sauce
  • 1 tablespoon Chipotle Hot Sauce
  • 1 tablespoon Worcestershire Sauce
  • 1 medium sweet onion, sliced thinly
  • 1 tablespoon bacon grease or oil
  • 4 ounces monterey jack cheese, sliced thinly
  • 1 tablespoon Chipotle Hot Sauce
  • 3 tablespoons Duke’s mayonnaise
  • Hawaiian Bread Loaf – sliced


Instructions

  1. In a large mixing bowl, gently combine ground beef, A1 sauce, chipotle hot sauce, and worcestershire sauce.
  2. In a small bowl, combine chipotle hot sauce and mayo to create the chipotle mayo.
  3. Form into rectangle shaped patties and set aside.
  4. Over a cast iron skillet, melt 1 tablespoon of bacon grease or oil, and saute onions in a single layer until they begin to brown.
  5. Once the onions begin to brown, create onion piles where the patties will be pressed into them on the griddle/skillet.
  6. Place patties on top of onion piles, and smoosh down a bit. Allow to cook until a good crust forms, where you can see the sides browning.
  7. Turn oven to broil.
  8. Flip each patty, with the onions attached, and allow to cook through to preference on the other side.
  9. Line a sheet tray with aluminum foil and place cooked patties on the pan.
  10. Top with cheese, and broil until golden brown. Depending on your oven, 2-3 minutes.
  11. Clean off skillet with a paper towel – be careful, it will still be hot!
  12. Butter one side of the bread, and place butter side down in the skillet. 
  13. Spoon on chipotle mayo, and a patty with melted cheese.
  14. Spoon some chipotle mayo on the other slice of bread, and top the sandwich.
  15. Spread butter on the “up” side of the bread before flipping to toast the other side.
  16. Serve immediately!
