Description

BBQ Chicken Sub Sliders are the ultimate game day food! Sweet Hawaiian rolls stuffed with rotisserie chicken, smoky BBQ sauce, creamy cheese, and topped with a honey-butter BBQ glaze—easy, cheesy, and perfect for parties, tailgates, or weeknight dinners.


Ingredients

  • 2 cups chopped rotisserie chicken

  • ¾ cup BBQ sauce

  • ½ cup mayonnaise

  • 1 tablespoon Sweetpea’s Firecracker Seasoning

  • American cheese slices

  • King’s Hawaiian Sub Slider Rolls

For the glaze:

  • 2 tablespoons butter

  • 2 tablespoons honey

  • 1 tablespoon BBQ seasoning

  • 1 teaspoon dried minced onions


Instructions

  • Preheat oven to 350°F.

  • In a bowl, mix 2 cups chopped rotisserie chicken with ¾ cup BBQ sauce.

  • In another bowl, stir together ½ cup mayo and 1 tablespoon Firecracker Seasoning. Spread this onto both the top and bottom halves of the Hawaiian slider rolls.

  • Add the BBQ chicken mixture, then layer American cheese slices over the chicken. Place the top rolls back on.

  • In a skillet, melt 2 tablespoons butter, then stir in 2 tablespoons honey, 1 tablespoon BBQ seasoning, and 1 teaspoon minced onion. Brush over the rolls.

  • Bake for 25 minutes. Cover with foil if rolls brown too quickly.

  • Serve warm with coleslaw and favorite sides.


Notes

Sweetpea’s Firecracker Seasoning:

  • 4 ounces Hidden Valley Ranch Seasoning (look for the big shaker, not the dip packet)

  • 4 ounces Carolina Brewery Dry Rub (or McCormick Smokehouse Maple Seasoning)

  • 2 ounces Garlic Powder

  • 2 ounces Onion Powder

  • 1 ounce Dried Chives

  • Optional: 2 teaspoons Red Pepper Flakes (adjust to taste)

  • Measure your ingredients. Use a kitchen scale for accuracy — especially for the bulk ranch and dry rub.

  • Combine in a large mixing bowl. Add ranch seasoning, dry rub, garlic powder, onion powder, dried chives, and red pepper flakes (if using).

  • Whisk to blend. Make sure everything is evenly distributed.

  • Transfer to an airtight jar. A 16-ounce mason jar with a tight lid works perfectly.

  • Label & store. Keep in a cool, dry place for up to 6 months.
