Ingredients
For the Air Fryer Chicken:

2 thin chicken breasts

1 tablespoon Sweetpea’s Firecracker Seasoning

½ tablespoon olive oil
For the Honey Dijon Dressing:

2 tablespoons red wine vinegar

1 tablespoon Dijon mustard

1 tablespoon honey

1 teaspoon oregano
-
Pinch of salt

Cracked black pepper

4 tablespoons olive oil
For the Wraps:

Tortillas (flour, wheat, or low-carb)

A thin smear of mayonnaise

Lettuce leaves

Shredded cheddar cheese

Sliced air fryer chicken

Drizzle of dressing
Instructions
Rub the chicken breasts with olive oil and Sweetpea’s Firecracker Seasoning. Place in your air fryer basket and cook at 400˚F for 10-15 minutes, or until the internal temperature reaches 165˚F. Slice thinly once cooled slightly.
In a small jar, combine red wine vinegar, Dijon mustard, honey, oregano, salt, pepper, and olive oil. Shake well until emulsified. Store in the fridge for up to one week.
Spread a tinge of mayo on each tortilla. Layer lettuce, shredded cheddar, sliced chicken, and a drizzle of dressing. Roll tightly, slice in half if desired, and serve immediately!
