Scrumptious Stuffed Acorn Squash

We have a garden. A big garden. We grew over 1000 ears of corn this year, countless zucchini, countless squash, eggplant, okra, beans, cucumbers, peppers, tomatoes, herbs, lettuce and spinach.

amazing.

It is sometimes difficult to come up with recipes that are yummy, that satisfy, that are not boring, and that are different. I love Sunshine Casserole, but if I eat another one in the next 5 months….. 
{I am not a leftover fan….. I prefer not to eat the same thing twice in one week….. Just saying…}
This afternoon, I wanted to use {some of} the acorn squashes we have downstairs. I love them roasted with cinnamon and brown sugar, but that is a desserty thing… I wanted something savory.
This recipe is simple, satisfiying, and scrumptious. How’s that for alliteration?!

Scrumpitous Stuffed {Acorn} Squash

Ingredients:

One box Uncle Ben’s Wild Rice mix… in the orange box!
One small onion, diced
Half a green bell pepper, diced
One small jar pimentos
1/2 + cup feta
1/4 pound cooked kielbasa, if preferred. {You could use whatever protein you like, though!}
Acorn Squashes, we used only 2, producing 4 servings.

Preheat oven to 400˚

Cook the rice according to package.

While the rice is cooking, open you squashes. Put them on their sides, and slice down the center. These babies are tough! So, PLEASE, PLEASE do not slice your fingers open. {I am NOT responsible for any such happenings, I’m warning you now!} Scoop out the seeds and either discard or clean and roast for a yummy snack. Place them on a half sheet pan, and roast at 400˚ while rice cooks. About 20 minutes.

In a separate saute pan, cook the the onions & peppers till soft.

Add onions & peppers to mixing bowl, followed by pimentos, feta, and rice (when it is ready). Mix all ingredients till combined, and add COOKED protein.This mixture is GREAT just by itself, easy peasy potluck meal!

Remove squashes, and stuff with rice mixture. Bake for 10 minutes more.

Open the oven and pat yourself on the back! Put those babies on a plate, and eat!

  1. There's a good way to avoid slicing your hand when you split these babies: put them into the microwave for a few minutes or into your regular oven for a good while longer. Once they begin to soften, they will slice much more easily, and the seeds will come out lickety split! Method is good for all winter-type squashes.

  3. A lovely recipe for fall–or at least I always think of acorn squash in the fall. Clearly I don't farm or else I'd know you can harvest them in summer!

    Acorn squashes ARE a Fall item!! However, our summer was so warm, they grew quickly and prolific!

    Thanks for the tip! I envisioned another hand surgery…. I will be sure and bake them a bit before slicing and scooping!
