Roasted Sausage & Pepper Skillet Supper
Next up in our Roasting Rules series is
this one skillet wonder for any meal!
Roasted sausage and peppers is a classic dish, but this keeps it on one skillet, right in your oven. You’ll dirty TWO dishes… the bowl you mix all the ingredients in and the skillet. Win win for busy weeknights!
This super quick and easy dish starts with bell peppers and sweet onions cut into large chunks. Toss those into a bowl with big slices of {turkey} kielbasa sausage. Swirl some EVOO + spices on top and mix until well coated. Pour onto a HOT skillet and place in the oven until roasted perfection is achieved.
I love buying those packet spice mixes in the spice aisle — the paper ones, that are usually just good for a couple meals? I love trying new spices, but don’t want a large container(s) of them around. For this recipe, I used the Brazilian Steakhouse marinade from McCormick and MAN! It was so yummy!!! I just sprinkled in about a tablespoon — didn’t follow the directions on the back…. You know me, I can’t follow a recipe….. 😉
Swirl in the spice blend and some olive oil (or any kind of oil you have on hand!) and mix well.

Description
A quick and easy low carb meal for any night of the week!
Ingredients
- 2 pounds kielbasa sausage (I prefer turkey!)
- 3 bell peppers, any color
- 1 medium sweet onion
- 1 tbs spice blend (any will do! use what you have on hand!)
- 2 tbs olive oil
Instructions
- While you preheat a 425 degree oven, place a cast iron skillet on the top rack to get screaming hot.
- Chop your sausage, peppers, and onions into large chunks into a large bowl. Sprinkle spice blend and oil on top and mix well.
- Remove your hot skillet and pour the sausage & pepper combo onto the skillet. Roast 20 minutes and serve immediately.

My sister introduced me to a similar recipe but we use beef smoked sausage and sesame oil and soy sauce and serve it over rice. Either way it is yummy. I am going to try out your version because it seems a bit healthier. ##HomeMattersParty
