We all know and love the curly little noodles you can get in the package for $0.25. And, we all know how hipster and dare I say posh ramen has become. Here in Asheville, Gan Shan Station restaurant devotes an entire night each week to ramen! 

 

I love ordering beef & broccoli from the chinese delivery man — but, combining these two loves was a match made in HEAVEN.

 

This was so yummy — and simple to make!

 

 

Boiling the noodles in beef stock elevates the flavor right away. Of course you can purchase the package, but throw away whatever seasoning package is inside! It’s filled with sodium, and you don’t need that in your life. Not today, Satan, not today! The steak is marinated overnight in a teriyaki sauce, then grilled to preference. Slice it as thin as you can, on the bias, and it melts in your mouth. Broccoli is steamed very lightly over simmering water — with a few shakes of the soy sauce bottle. Sprinkle some peanuts over the top of your dish, as well as some green onions. These crunchy, fresh flavors take your ramen over the top, creating a memorable week night meal, in a matter of minutes.

Beef & Broccoli Ramen

Description

A quick and healthy weeknight meal — filled with teriyaki grilled steak, steamed broccoli, and the curly noodles of your childhood.


Ingredients

Scale
  • 2 pounds flank steak
  • 1 cup + 2 tbs teriyaki marinade, reserving the 2 tablespoons for later
  • 16 ounces beef broth
  • 2 packages ramen noodles, plain
  • 1 pound broccoli florets
  • 2 tablespoons soy sauce (low sodium)
  • 1 tablespoon oyster sauce
  • 1 tablespoon sweet chili sauce
  • 2 tablespoon salted, roasted peanuts
  • 2 tablespoon sliced green onion


Instructions

  1. The night before place steak in bag with marinade. Smoosh around every once in awhile. (if short on time, quickly marinade for one hour before grilling. longer is better)
  2. Cook noodles according to package, using beef broth instead of water.
  3. Grill flank steak over high heat for 8-10 minutes, depending on your preference of doneness.
  4. Steam broccoli over simmering water with two tablespoons soy sauce.
  5. Stir reserved teriyaki sauce, oyster sauce, and chili sauce in small bowl and set aside.
  6. Once all items are finished cooking, plate in shallow bowl, followed by a ladle or two of the beef broth. Drizzle sauce over beef & broccoli, followed by a garnish of peanuts and green onions. Enjoy immediately!

Notes

  • Would be great with chicken, shrimp, or tofu!
